Ingredients
180g All Things Butter Salted Butter, browned
200g brown sugar
20g granulated sugar
3 large eggs
2 tsp vanilla extract
200g all-purpose flour
1 tsp baking powder
¾ tsp salt
150g toffee bits
Flaky sea salt, for finishing
For the homemade toffee bits:
120g All Things Butter Salted Butter
200g Brown sugar
1tsp Salt
Method
Step 1
Brown the butter: In a saucepan, melt butter over medium heat until golden brown and nutty, 5-7 minutes. Scrape into a bowl and cool for 5 minutes.
Step 2
Whisk together brown sugar and granulated sugar until smooth. Add eggs one at a time, whisking well. Stir in vanilla.
Step 3
Sift together flour, baking powder, and salt. Fold this gently into the wet mixture until just combined.
Step 4
Fold in most of the toffee bits, reserving a handful for topping.
Step 5
Spread batter into a parchment-lined 8x8-inch pan. Sprinkle remaining toffee on top.
Step 6
Bake at 175°C for 30-35 minutes, until edges are set and center is slightly gooey.
Step 7
Sprinkle with flaky sea salt. Cool fully before cutting for neat squares (or dig in warm for gooey ones).
For the homemade toffee bits:
Step 1
Line a tray with parchment paper and set aside.
Step 2
Melt the butter, sugar and salt together on a pan on medium heat, whisking constantly for 10 minutes until the mixture starts to brown and thicken.
Step 3
Pour onto the prepared tray and let cool for 20 minutes. Once cool, break into pieces to use in the blondies.
