Make it with:
Ingredients
1kg Maris Piper potatoes, peeled and thinly sliced on a mandoline
100g All Things Butter Salted Butter
Sea salt flakes and freshly ground black pepper
100ml rapeseed oil
Parmesan, finely grated, to serve (optional)
Method
Step 1
Preheat the oven to 130C/110C Fan. Line a 900g loaf tin with baking paper.
Step 2
Melt the butter in a sauce pan or the microwave, then allow to cool a little. Toss with the potato slices, salt and pepper in a mixing bowl until well coated, then tightly layer into the loaf tin.
Step 3
Cover with a layer of baking paper, then bake in the oven for 3-4 hours or until completely tender.
Step 4
Allow to cool a little, then cover with foil and place a heavy weight (such as a tin or jar) on top. Leave overnight in the fridge to firm up.
Step 5
The next day, carefully remove from the tin and slice into 3cm chunks.
Step 6
Heat the oil in a large frying pan on a medium heat. Add the chunks and fry for 5 minutes on each side, until deeply golden. Sprinkle with more sea salt and grate over the Parmesan, if using. Enjoy!
