Make it with:
Ingredients
40g All Things Butter Garlic & Herb Butter
1 large onion finely chopped
1 celery stalk, finely diced
500g of beef mince
1tbsp of tomato puree
2 large garlic cloves
1 bay leaf
1 large carrot, peeled and diced
1 large tomato (optional), chopped
150ml of red wine (optional)
4 sprigs of fresh thyme, stems removed
Soy or worcestershire sauce to taste
1 tbsp of plain or gf flour
250ml of homemade chicken or beef stock (or stock cube)
Salt & Pepper to taste
For the mash:
750g of potatoes
50g All Things Butter Unsalted Butter
100ml Milk (add more if needed)
For the greens:
100g of Cavelo nero
15g All Things Butter Salted Butter
Method
Step 1
Heat a knob of your garlic butter in a large heavy-based pan. Add the onion, celery and carrot and cook until softened.
Step 2
Turn up the heat and add in your mince and fry for around 4-5 minutes until browned all over. Make sure to break up the pieces as you go.
Step 3
Add in your tomato puree, tomato and garlic. Cook for 1-2 minutes. Stir in your flour if using and cook for another minute. Pour in your red wine and stir until absorbed.
Step 4
Add in your thyme along with the stock and simmer for 45 minutes until the sauce has thickened. The longer the better! Season to taste and add a splash of soy sauce.
Step 5
Meanwhile, for the mash, halve your potatoes and boil in a pan of salted water. Reduce the heat and simmer for around 15 minutes until tender.
Step 6
Drain the potatoes and leave them to sit to drain off any moisture. Return them to the saucepan and add in your butter, milk, and beat into a smooth mash. Season to taste.
Step 7
Preheat your oven to 200C. Put the cottage pie filling in a baking dish and spoon your mash on top. Add a few small knobs of butter and bake for 20-25 minutes until golden brown.
Step 8
For your greens, bring a pan of water to the boil. Add your greens to a steamer and allow to steam for a few minutes until soft.
Step 9
Drain and transfer your greens to the saucepan, along with butter and salt to taste.
Step 10
Serve your cottage pie alongside your greens and dig in!
