Ingredients
For the pudding
300g pitted dates, chopped
300ml boiling water
1 tsp bicarbonate of soda
120g All Things Butter Unsalted Butter
160g dark soft brown sugar
3 large eggs
2 tsp vanilla extract
220 g self-raising flour
¼ tsp fine salt
For the sauce
250ml double cream
120g All Things Butter Salted Butter
150g light soft brown sugar
2 tbsp golden syrup
Pinch salt
Method
Step 1
Preheat the oven to 170°C fan. Butter the dish and line the base with parchment.
Step 2
In a large mixing bowl, add the dates, boiling water, and bicarbonate soda. Stir together and leave for 10 minutes, then mash lightly with a fork.
Step 3
Melt the unsalted butter and let cool for 2 minutes then whisk with brown sugar until combined. Whisk in eggs and vanilla.
Step 4
Fold in the flour and salt, then fold in the warm date mixture until all ingredients have been combined.
Step 5
Pour the mixture into the dish and bake for 25-35 minutes until risen and a skewer comes out with a few moist crumbs.
Step 6
For the sauce, simmer cream, salted butter, sugar and syrup for 3-4 minutes, stirring, until glossy. Season with a tiny pinch of salt.
Step 7
Pierce the hot pudding all over with a knife, and pour on a third of the sauce. Rest for 5 minutes. Serve with extra sauce at the table, dig in and enjoy!
