Ingredients
1 x 350g pack Sunny & Luna Spinach Gnocchi
70g All Things Butter Salted Butter
150g ricotta
1 tbsp olive oil, plus extra for frying
Juice & zest of ½ a lemon
2 tbsp capers
A small pinch of chilli flakes
Salt & black pepper
Method
Step 1
Add ricotta to a bowl with 1 tbsp olive oil, lemon juice, and a good pinch of salt and pepper. Beat until light and creamy, then set aside.
Step 2
In a large, non-stick frying pan, heat a small knob of butter over medium-high heat. Pat the capers dry, then fry for 2-3 minutes until crispy. Remove and drain on kitchen roll.
Step 3
In the same pan, fry the gnocchi for 6 minutes, adding another lashing of butter if needed. Transfer to a plate lined with kitchen towel and set aside.
Step 4
Add all the butter to the same pan and allow it to melt and foam, swirling occasionally, until golden brown. Add the chilli flakes, capers and gnocchi and toss well to combine.
Step 5
Divide the whipped ricotta between two plates and spread into a thin layer as a base. Top with the gnocchi and drizzle over any brown butter left in the pan.
Step 6
Finish with lemon zest and a good crack of black pepper. Enjoy!
