Make it with:
Ingredients
For the squash:
1 medium - large squash
3 tbsp of olive oil
2 tbsp of cayenne pepper chilli flakes
2 tbsp of coriander powder
2 tbsp of fenugreek powder
3 minced garlic cloves
For the butter bean mash:
55g of All Things Butter Garlic & Herb Butter
235g of tinned butter beans
Coriander leaves, chopped
half a cup of milk
Salt & pepper to taste
100g lentils , tined
Method
Step 1
Slice your squash into wedges, removing both ends and scraping the seeds from the centre. Preheat the oven to 190 degrees.
Step 2
In a small bowl, mix the olive oil, cayenne pepper chilli flakes, coriander powder, fenugreek powder and minced garlic cloves.
Step 3
On a baking tray, generously spread the mixture over the squash wedges and sprinkle with salt. Cook for 20-25 minutes.
Step 4
Meanwhile, in a pan melt the Garlic & Herb Butter on medium heat and add the butter beans. Season with salt, pepper and coriander, and mix well.
Step 5
Using a potato masher, mash the beans until a thick and smooth consistency has formed.
Step 6
Plate up the mash and load the squash and lentils on top. Dig in and enjoy!
