Roast Potatoes with Garlic & Herb Butter

Ingredients

1.5kg Maris piper potatoes, peeled and cut into 4-5cm chunks

100ml olive oil

2 tbsp semolina or polenta

Sea salt flakes

4 garlic cloves, bashed

100g All Things Butter Garlic & Herb Butter, cut into cubes

Few sprigs fresh rosemary

Few sprigs fresh thyme

Method

Step 1

Preheat the oven to 220C/200C Fan. Add the potatoes to a large pan of salted water and bring to the boil, then cook for 10-15 minutes or until knife tender.

Step 2

Drain well in a colander, tossing to fluff the edges, then leave to steam dry for 5 minutes.

Step 3

Meanwhile add the olive oil to a large high sided roasting tray and place in the oven to heat.

Step 4

Carefully add the potatoes to the hot oil, along with the semolina, plenty of sea salt and garlic cloves. Toss well, then place in the oven for 40 minutes, turning the tray halfway through.

Step 5

Remove from the oven and add the butter cubes, rosemary and thyme. Toss together to scatter, then return to the oven for 10-15 minutes until deeply golden and crisp. Enjoy!
