5 Mini Pigs in blankets
1 red onion
1 shallot
30g All Things Butter Truffle Butter
3tsp brown sugar
2.5 tsp cider vinegar
1tsp honey
Sprinkle of pepper
1/2tsp garlic granules
A small bunch of fresh chives diced finely
Salt & Pepper
Method
Step 1
Cook your pigs in blankets according to the pack
Step 2
Whilst these cook, make your caramelised onions: heat a pan on a medium heat, then slice your onion and fry off in about 1tbsp oil & a generous knob of truffle butter.
Step 3
Turn heat to low then gently cook down until they start to get soft and jammy. Add your vinegar and sugar, then leave to simmer and stir gently for about 5 more minutes.
Step 4
You can then turn the heat up slightly so it bubbles away, keep stirring regularly until it darkens in colour. Then either take off the heat or leave on a low heat until ready to serve.
Step 5
Meanwhile, toast a slice of your favourite bread and generously spread a layer of truffle butter over it.
Step 6
Add a few slices of goat’s cheese and spread a thick layer on the toast. Assemble the pigs in blankets on top.
Step 7
Spoon over your caramelised onions, finishing with a sprinkling of chopped chives and a pinch of salt and pepper. Dig in and enjoy!
