Ingredients
1 hake fillet
All Things Butter Salted Butter
Green Peas
Green beans
1 lemon
A bunch of mint
1 garlic clove
Olive oil
Salt & pepper to taste
Method
Step 1
Finely chop the mint, slice the garlic clove, cube the butter and squeeze half a lemon into a blender. Blend until combined into a mint butter.
Step 2
Cut the fillet of hake in half to make two smaller filets and season with salt. Rub oil on both sides of the fillet and cook in a pan on medium heat.
Step 3
Add the mint butter to the pan and cook the hake on both sides until golden / charred, continuously basting with the butter, then remove from the pan.
Step 4
Add green peas and beans to the pan, mixing with the leftover mint butter until soft.
Step 5
Plate up the green peas and beans, placing the hake on top, and drizzle any leftover mint butter over the dish. Enjoy!
