Wild Mushroom Toast with Truffle Butter

Ingredients

200g wild mushrooms, thinly sliced

55g All Things Butter Truffle Butter, plus extra for the toast

2 slices of thick sourdough

A pinch of flaky salt

Parsley, to garnish

Method

Step 1

Melt 45g of the Truffle Butter in a frying pan over medium heat. Add the mushrooms with a pinch of salt and fry for 10 minutes until soft and lightly golden.

Step 2

While the mushrooms cook, toast the bread and melt the leftover butter in a ramekin in the microwave in short bursts.

Step 3

Spread the toast with extra Truffle Butter, then pile the fried mushrooms on top.

Step 4

Drizzle with the melted butter and finish with a few sprigs of parsley. Enjoy!

Optional

Add a fried egg for extra protein!
