Method
Step 1
Take your clams, sorting through and removing any broken ones, and leave them in salted cold water for half an hour to clean.
Step 2
In the meantime, finely dice a shallot and some celery.
Step 3
Over a medium heat, salt and soften in a little butter and oil. Pour in a splash of white wine, then add in your clams and wild garlic.
Step 4
Steam until the clams open and spoon on to buttered toast. Making sure you have plenty of liquor on the plate for the toast to soak up. Finish with chilli flakes and a drizzle of olive oil.
