Ingredients
300g orzo
65g All Things Butter Garlic & Herb Butter
1 large courgette
200g frozen peas
4 spring onions
Juice and zest of ½ a lemon
A pinch of salt, to taste
Small handful of chopped basil leaves
Method
Step 1
Cook the orzo in a large pan of salted boiling water according to pack instructions, adding the peas for the last 2 minutes.
Step 2
Drain, rinse with cold water, and tip into a large mixing bowl. Thinly slice the courgette and spring onion, and add to the bowl.
Step 3
Melt the butter in a ramekin in short bursts in the microwave, then pour it over the orzo. Give everything a good mix, adding the lemon juice and salt to taste.
Step 4
Serve in a large serving bowl, finished with lemon zest and chopped basil. Plate up and enjoy!
