

Make it with:

Ingredients
2 sirloin steak fillets (400g)
50-70g of All Things Butter Salted Butter
2x Corn on the cob
1 large avocado, sliced
Pickled red onion
100g of salad pea shoots, lettuce
½ Cucumber, finely sliced
Large handful of coriander
2tbs of olive oil
Method
Step 1
Take your steak out the fridge and let it come to room temperature. Season well and coat in a little oil/ butter and set aside to marinade.
Step 2
Preheat the oven to 180C. Add your corn to a tray, along with a good chunk of salted butter.
Step 3
Pop in the oven for 15-20 minutes until the corn is soft and starting to brown. Make sure to shake the tray once the butter has melted so it coats the corn.
Step 4
For the pickled onion, add sliced red onion, salt and lemon juice to a bowl and set aside. You could also use a jar of ready made pickles.
Step 5
For the salad, combine your salad leaves, sliced avocado and cucumber in a bowl with a lime juice and olive oil.
Step 6
Once your corn is ready and cooled a little, shave it off the cob and add to your salad along with your pickled red onions. Stir to combine.
Step 7
Head a pan over a high heat along with your salted butter. Once hot, add in your steak and cook for 2-3 minutes each side (medium rare), depending on how well done you want it.
Step 8
Transfer to a plate to let it rest. Serve your salad along with your sliced steak and top with some of the leftover melted butter from the pan and fresh coriander. Enjoy!
