Ingredients
For the schnitzel
2 pork steaks
All Things Butter Garlic & Herb Butter
1 egg
Flour
Breadcrumbs
For the salad
1 tablespoon of olive oil
1 tablespoon of dijon Mustard
1 Lemon
Olive oil
Salt & pepper
1 Apple
Radicchio leaves
Method
Step 1
Cover the pork steaks with parchment paper on both sides, and use a heavy pan / rolling pin to flatten the steaks by repeatedly banging the steaks until thin.
Step 2
Lay out 3 trays, filling the base with flour, a whisked egg, and breadcrumbs respectively. Sprinkle salt on either side of the steaks before covering first with flour, then egg, then breadcrumbs. Ensure the entire steak is covered at each stage.
Step 3
In a mixing bowl, add olive oil, dijon mustard, … and squeeze half a lemon. Mix together to create the salad dressing.
Step 4
Separate the radicchio leaves and slice the apple into thin strips. Add to the mixing bowl with the dressing and toss until covered well.
Step 5
Heat oil in a frying pan on a medium-high heat, then cook the breaded schnitzel for 3-5 minutes on each side, or until golden and crispy.
Step 6
Add the Garlic & Herb butter to the pan and baste the melted butter over the schnitzel until completely covered. Plate up and enjoy!
