Ingredients
500g courgettes
30g garlic & herb butter (plus 1 tbsp extra for roasting or substitute with olive oil)
300g Greek yoghurt (or dairy free alternative)
Juice of ½ lemon
Salt & pepper, to taste
Handful of fresh basil and dill, roughly chopped
Toasted pumpkin seeds, for topping
Method
Step 1
Preheat the grill to high.
Step 2
Top and tail them, then cut into chunky slices. Toss with 1 tbsp of garlic butter (or olive oil) and spread on a lined baking tray.
Step 3
Grill the courgettes for 15–20 minutes, until charred and softened.
Step 4
To make the drizzle, melt the garlic & herb butter in a small saucepan over medium heat. Once melted, remove from heat and set aside to cool slightly
Step 5
For the yoghurt base, mix the yoghurt with lemon juice, salt, pepper, and a drizzle of olive oil.
Step 6
Toss the grilled courgettes with the chopped herbs. Spoon the garlic yoghurt onto a serving platter, then layer the courgettes over the top.
Step 7
Sprinkle with toasted pumpkin seeds and drizzle over the melted garlic butter. Plate up and enjoy!
