Garlic & Herb Smashed Potatoes with Salmon with Garlic & Herb Butter

Ingredients
1 Salmon fillet
15g All Things Butter Garlic & Herb Butter
Handful of Salad leaves of your choice
Handful of New potatoes
Olive oil
Squeeze of lemon
Chilli flakes
Coriander
Fennel
Method
Step 1
Boil the new potatoes in a pan until soft. Apply pressure to the softened potatoes with a cup or rolling pin until flattened / smashed.
Step 2
Drizzle the smashed potatoes with olive oil and salt & pepper to taste. Bake in the oven at 180 degrees Celsius until golden and crispy.
Step 3
Boil the salmon fillet until cooked through. Separate into smaller chunks with a fork until the fillet is broken apart.
Step 4
Finely chop coriander and fennel, adding to a mixing bowl with olive oil, fresh lemon, chilli flakes and salt & pepper. Stir well.
Step 5
Add a generous knob of All Things Butter Garlic & Herb Butter to a pan and melt on a medium to high heat.
Step 6
Toss your preferred salad leaves with olive oil and plate up with the smashed potatoes and salmon chunks. Drizzle the melted butter over the potatoes and salmon, topping with the coriander & fennel dressing. Enjoy!
1 Salmon fillet
