Make it with:
Ingredients
1 aubergine
Olive oil
Sea salt
3 tbsp Greek yoghurt
1 handful chopped mint
1 clove garlic, grated
75g All Things Butter Salted Butter, cubed
1 tbsp harissa paste
Method
Step 1
Slice the aubergine in half lengthways and score the flesh, taking care not to cut through the skin.
Step 2
Drizzle with olive oil and salt and roast in the oven at 200 degrees for 30-40 mins until soft and jammy.
Step 3
Meanwhile, combine the yoghurt, grated garlic, mint and salt in a bowl.
Step 4
For the harissa butter, melt the cubes of butter in a pan over a gentle heat, then stir in the harissa paste.
Step 5
To plate up, spoon the yoghurt onto a plate, assemble the aubergines on top and drizzle over the harissa butter. Enjoy!
